The Tree of Life

The coconut is referred to as the ‘Tree of Life’ by Pacific Islanders – and for good reason. From providing food and water to having medicinal and beauty uses, the coconut can do it all.

What does a coconut provide?

  • Coconut ‘meat’ – the flesh inside the coconut.
  • Coconut water or juice – the liquid inside the coconut
  • Coconut cream – made from pressing the coconut milk
  • Coconut milk – made from the juice of coconut meat and water
  • Coconut oil – the fatty oil that comes from the coconut meat

The coconut is classified as a ‘functional food’ because of the many health benefits it provides in addition to its nutritional content.

Follow the series to find out the many benefits and uses of the coconut!

Cinnamon Hot Chocolate – a holiday in your mouth

I was very sceptical to try cinanamon hot chocolate for the first time a of couple days ago. To me, cinnamon and cocoa don’t really go together at all. I was won over from the first sip! It really does feel like a holiday in your mouth.

Here is the recipe we use to make it home – quick and simple!

2 cups non-dairy milk
2 heaped teaspoons cocoa
4 teaspoons brown sugar
2 – 3 sticks cinnamon

Start warming the milk, sugar and cinnamon in a pot on the stove (it seems to taste much nice made on the stove instead of in the microwave).
Once the milk is warm, add the cocoa – it dissolves a little easier when the milk is warm.
The milk doesn’t need to boil, it just needs to get ‘hot enough’.
Pour in your favourite mug, and enjoy!
